I’ve been spending all my time in my kitchen, it’s the only thing that keeps my mind somewhat at ease. In search of relief I decided to bake the LAUSD Coffee Cake from recently published by THE LOS ANGELES TIMES. It certainly didn’t wash my worries away but it does make sheltering in place a little more delicious…and right now comfort baking/cooking is one of the few things I can hold on to. HOLD ON this is temporary for all of us, is what I keep telling myself. 💙 Strong Hugs.

Lately I wake up and immediately take an inventory of how my body feels. I’m scared. I’m scared to leave my house for essential business. I’m scared that my loved ones may be exposed to it. I’m scared of the uncertainty of what will unfold next. I hate that I’m unable to get a hold of this anxious feeling. It’s like I’m in a maze and can’t find my way out. I read the news for any shred of hope and see all the numbers climb. It’s terrifying. For the first time in my life, I can’t breathe. I know so many of us are feeling this way.

LAUSD Coffee Cake Recipe:

  • 2 1/2 cups flour
  • 1 cup brown sugar
  • 1 cup bakers sugar
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 3/4 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 egg
  • 1 cup buttermilk

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Grease a 13×9 baking pan, and set to the side.
  3. In a bowl mix flour, brown sugar, bakers sugar, salt, nutmeg, and vegetable oil together until it becomes crumbly.
  4. Remove 1/2 cup of flour/sugar mixture from bowl to make the topping. Add 1 teaspoon of ground cinnamon and mix to combine. Reserve to the side for later use.
  5. In a stand-up mixer with a paddle attachment combine remaining 1 teaspoon ground cinnamon, baking soda, egg, and buttermilk. Mix well until fully combined.
  6. Add in flour mixture and mix just until combined.
  7. Spoon batter into prepared pan and shake it slightly from side to side to make sure it evenly distributes.
  8. Sprinkle with 1/2 cup of reserved topping.
  9. Bake for 35 to 40 minutes.
  10. Allow to cool for 25 minutes before cutting.
  11. Enjoy!
