BBAH Sandwich (Bacon Brie Apple Honey)

Mmmmmm. That’s the sound that slips my lips when a scrumptious sandwich as mouthwatering as this one is set before me.  Let me rewind a little.  I was in Vegas for the Blogalicious conference, thanks to my awesome sponsor Sprint.  It was a great deal of fun.  I learned so much and was inspired to run back home and start posting.  I also made a ton of new friends and danced my ass off at a few late night parties and do I really need to explain, we’re talking Vegas here.  Long weekend short, once Sunday arrived I needed something greasy but with a touch of sweet and a light crispy crunch in my belly, something to soak up a weekend in Vegas.  Bacon and apple…. add some brie and a dash of honey and you’ve got the winning hand.

Ingredients for BBAH Sandwich:

2 – slices of french bread

2 to 3 – slices of granny smith apple

3 – slices of brie cheese

1 – tablespoon of honey

4 – slices of cooked bacon

 

Take a slice of french bread and top with apples slices.  The arrange the bries slices on top of apple.  Drizzle the brie with honey.  Top the honey brie with bacon slices.  Place the other slice of french bread on top and you have got your self a seriously delicious sandwich!

When I elect to go for the gusto….there is no holding me back.  Yes I love bacon, but more than that I heart a slab of beans and cheese smeared in a flour tortilla.  Who doesn’t?  This is a sneak peek of what goes down in my kitchen on those nights when I live to eat with no restraints….. that falls under the category of soothing my soul.

Ingredients for bacon bean and cheese burrito:

a package of bacon

1 – chile de arbol

3 – cups beans de la olla (if you don’t have time to make a batch “Sun Vista” pinto beans works well)

1 – teaspoon salt

1 – cup grated jack cheese

1 – cup grated cheddar cheese

flour tortillas

In a large pan over a medium flame, fry up your bacon till it is crisp and perfectly cooked. Then remove bacon from grease and dispose of half the grease.

   

Reserve the other half and while it’s still hot add the chile de arbol and beans.  Allow for beans to heat stirring occasionally.  Then add salt and with a potato masher start to smash beans to get a creamy consistency.

   

Next add jack cheese and cheddar cheese…. Mix well. Then crumble in bacon.  Reserve a few slices on the side.  Remove from flame.

   

Heat flour tortilla on each side over an open flame for 30 seconds on both sides.  Then add 2 tablespoons of bean and cheese to the middle of the tortilla and add a slice of bacon to the center of the beans.

Fold in outer ends, then roll to close.  Once you have your burrito/burritos rolled up heat a non stick pan over a medium flame and allow pan to get hot.

   

Place burrito in pan and grill on each side till tortilla is crisp.

Remove from flame and dig into HEAVEN!  I eat mine all by itself or with sour cream, avocado, salsa or tapatio.  Mmmmmmmm.  Enjoy!

I belong to a group of Latina bloggers, and within the group there are a few of us obsessed with food.  One of my blogging hermanas decided to call a Latina Cook-Off challenge. The only criteria is we use pistachios and bacon in our recipe and post it on Saturday September 3rd. Here is my entry to the cook off…. a simple appetizer that will be gone faster then you can say WONDERFUL PISTACHIOS!

Ingredients for pistachio cheese filled dates wrapped in bacon:

16 – medjool dates

1/4 – cup cream cheese

1/4 – cup goat cheese

17 – wonderful pistachios (shelled and chopped)

4 – stalks green onion (chopped)

1/4 – teaspoon Lawry’s seasoning salt

1/4 – teaspoon black pepper

8 – slices bacon

Take dates and slice down one side and remove pit.

In a small mixing bowl add cream cheese, goat cheese, chopped wonderful pistachios, chopped green onion, Lawry’s and black pepper. Mix well. Then fill a teaspoon with a heaping amount of cheese filling and fill date. Repeat till done.

Grab your bacon and slice in half.

Take a half piece of bacon wrap it around date and close with a toothpick. Repeat until done.

Place all bacon wrapped dates on a aluminum foil lined cookie sheet.

Place under the broiler on high  and cook on first side for 6 to 8 minutes or until golden crisp, then remove from broiler flip them over and cook on the other side for an additional 4 minutes.  PERFECT PISTACHIO CHEESE FILLED DATES WRAPPED IN BACON!!!!!!

BNB (Bacon, Nutella, and Banana) croissant sandwich

BNB (Bacon, Nutella, and Banana) croissant sandwich

I have a confession to make.  You see this sandwich pictured above, I eat it often and more than anyone should admit.  I’m trying to cut back, but it’s so banana fresh, salty, sweet, flakey, and chocolatey.  Usually I have it on a big croissant, but recently Thomas came out with pre sliced sandwich croissants that are slightly bigger than my palm and only 160 calories.  The way I look at it…. I am cutting back with the perfect sized croissant sandwich.  Now I could enjoy the best of both worlds and not feel guilty about it.

Ingredients for BNB croissant sandwich:

1 – Thomas sandwich croissant

1  to 2 – tablespoons Nutella (depending if you want to spread on both sides of croissant)

1/4 –  sliced banana

4 – slices of thick sliced cooked bacon

 

Take your croissant and spread nutella on one half or both.

Then take a few slices of banana and place on top of nutella.

Then take your scrumptious bacon and place on top of banana.  Top with other half of croissant.  That’s it your done.
