Potato Cheese Corn Tortillas

Have you ever tried corn tortillas made with mashed potato and cheese?  I never had and was thinking of how amazing these type of tortillas would be with a plate of beans or a bowl of rajas con queso or with a slab of butter.  Let me rewind and tell you where this insane train of thought is actually coming from.  I was thinking of the Mexican Revolution.  I know, where’s the bridge between the Mexican Revolution and corn tortillas? Let me explain how my wacky brain thinks sometimes.

The Mexican Revolution was a major armed struggle that started in 1910, with an uprising led by Francisco I. Madero against longtime tyrant Porfirio Diaz, and lasted for the better part of a decade until around 1920.  Over time the Revolution changed from a revolt against the established order to a multi-sided civil war with frequently shifting power struggles.  This armed conflict is often categorized as the most important social-political event in Mexico and one of the greatest overthrows of the 20th century, which saw important experimentation and improvement in social organization. 

Experimentation is always something I’m willing to delve into, which brings me back to my corn tortillas.  I am in no way trying to diminish the importance of the Mexican Revolution by comparing it with my tortillas.  What I am saying (tongue in cheek, of course) is that something that has come to be the normal for many many years,  like the beautiful corn tortilla for instance, can be re-made.  I’ve taken the classic corn tortilla and have blended it with mashed potatoes and cheese.  I know there are a lot of purists out there that would consider this food-blasphamy but the results are beyond interesting and delicious.

Ingredients for potato cheese corn tortillas:

  • 1 – cup of leftover mashed potatoes (can not be instant potatoes, has to be homemade)
  • 1 1/8 – cup corn masa flour
  • 1/4- teaspoon salt
  • 2/3 – cup water
  • 1/2 – cup grated cheese (I used queso quesadilla)

Directions:

  1. In a mixer add in leftover mashed potatoes, corn flour, and salt. Mix on medium until combined and the mixture becomes grainy.
  2. Add in water and mix to combine. The mixture will become a soft dough and should not be sticky. If sticky…. a tablespoon of corn flour one at a time.
  3. Add in the cheese and mix to combine.
  4. Divide the dough into 12 parts and roll into balls with the palm of your hands. _MG_1145
  5. Then using a tortilla press (or two books), line each side with a layer of plastic. Place a masa (potato corn tortilla mixture) ball in the center and press. This will flatten it and make it a perfect disk. _MG_1149 _MG_1157
  6. Place on a hot comal and cook on each side for 2 minutes or until slightly crispy. _MG_1169 _MG_1179

Make way for the cranberry sauce… I never understood why anyone would serve cranberry sauce out of a can. That weird gelatinous tube with the indents from the can still imprinted in it’s side. No wonder I refused to eat it as a young girl. It wasn’t till my teenage years that I witnessed a friend of mine make it fresh. I was not only facsinated with the process, but couldn’t believe how incredibly easy it was to make. People add cinnamon and all sorts of other things to the versitale cranberry sauce, I decided to add tangy hibiscus to the tart cranberry for an exquisite side to my turkey this Holiday season. Enjoy!

Ingredients for cranberry hibiscus sauce:

  • 1/2 – cup dried hibiscus flowers
  • 2 1/2 – cups water
  • 2 – cups sugar
  • 24 – ounces fresh cranberries

Directions:

  1. In a pot over a medium flame add in hibiscus flowers and water. _MG_0633 _MG_0645
  2. Bring to a boil and let boil for 10 minutes. _MG_0657
  3. Remove flowers from water. _MG_0660
  4. Pour sugar into the hibiscus water, and mix until sugar is completely dissolved. _MG_0670
  5. Bring mixture to a boil, creating a hibiscus syrup.
  6. Add in cranberries. cranberry spill
  7. Mix cranberries to coat in hibiscus syrup.
  8. After about 5 to 10 minutes you will hear the cranberries start to pop. At this point take a potato masher and smash the mixture down, until all cranberries have popped. _MG_0689
  9. Place mixture in a bowl, and place in the fridge for a minimum of 3 hours or until mixture firms. _MG_0717

Papas Gratinadas: Mexican Potatoes Au Gratin

A few weeks ago, I was in New York as one of the top 100 blogueras of Latism. I was chosen along with 99 other Latina bloggers as one of the best Latina bloggers in the nation. We (all 100 0f us) were invited to the United Nations as part of our conference. We were there covering issues about education, health, business, and gender equality with top officials of the secretariat. While I was there I thought about potatoes and how they are so affordable and feed so many people. I remembered my trip to Idaho a year ago and decided to ask a few of my fellow Latina blogueras (Maura of The Other Side Of The Tortilla, Yoly of Savvy Mujer and Cuponeando, and Melissa of Hungry Food Love)  what they make with potatoes? I took what they said , then came home and made one of the suggested dishes. Check out the video below. Super fun, easy, and delicious…. three of my favorite things.

Ingredients for Papas Gratinadas:

  • 7 – Idaho Potatoes (peeled and boiled for 20 minutes)
  • 7 – anaheim chiles (roasted, peeled, and deseeded) (timesaver tip: buy them canned)
  • 7 – 1/2 inch slices of pepper jack cheese
  • 1 3/4 – cups of Mexican crema
  • 1 – onion (sliced)
  • 1 1/2 – cups sharp cheddar cheese (grated)
  • 1/2 – teaspoon chili flakes
  • 1 – teaspoon Lawry’s seasoning salt
  • 1/2 – teaspoon ground black pepper
  • 1 1/2 – cups pepper jack cheese (grated)
  • 10 x 8 casserole dish (spray sides with non stick spray)

Directions:

  1. Peel and boil potatoes for 20 minutes. Drain and set to the side.
  2. Cut potatoes into 1/2 inch slices. It’s okay of it becomes crumbly, you will use the crumbs too. Set to the side.
  3. Slice chiles down the middle and stuff with pepper jack cheese slices. Set to the side.
  4. Preheat oven to 350 degrees fahrenheit.
  5. Pour 1/4 cup of crema on the bottom of the casserole dish. Smooth it out with a spatula or the back of a spoon.
  6. Next place down a layer of potato slices.
  7. Top with stuffed anaheim chiles.
  8. Sprinkle the top of stuffed chiles with sliced onions.
  9. Pour in a 1/2 cup of Mexican crema over the top of onions.
  10. Generously sprinkle the top of the crema and onions with cheddar cheese.
  11. Next srinkle in chili flakes, Lawry’s, and ground pepper.
  12. Add another layer of Idaho potatoes.
  13. Then add in another 1/2 cup of crema.
  14. Top with remaining potatoes and another 1/2 cup of crema.
  15. Finish the whole casserole layering with a 1 1/2 cups grated pepper jack cheese.
  16.  Bake in the oven for 50 minutes, then place the casserole dish on the top shelf of oven under the broiler (on high) for 3 to 5 minutes, or until golden crisp.
  17. Let cool for 20 minutes before serving.

Holy Moly. This salad puts the WOW in factor, as my fiance found out this afternoon. I watched him dip his tortilla chip into his bowl without stopping for a breather over the course of 20 minutes. When he finally took his eyes off his bowl he said to me “SWOON.” I second that emotion. Easy to make and ready to be served after 30 minutes.

Ingredients for esquites recipe:

  • 2 – tablespoons mayo
  • 1 – teaspoon chopped garlic
  • 4 – corn on the cob
  • 1/2 – cup crema (Mexican cream)
  • 2 – limes (juiced)
  • 1/4 – cup cilantro leaves
  • 1 – jalapeno (finely chopped)
  • 1/4 – green onion chopped
  • 5 – ounces cotija cheese (crumbled)
  • 1/2 – teaspoon chili flakes
  • 1/2 – cup black beans (small can, rinsed and drained)
  • Tortilla chips (I prefer nacho cheese Doritos)

Tools Needed:

  • OXO 9″ whisk
  • OXO Thongs
  • OXO Salad Dressing Shaker
  • OXO Corn Peeler
  • OXO 4″ Santoku Chopping Knife

Directions:

  1. In a small bowl whisk mayo and garlic together. Brush mayo on corn, and place on a hot grill. Grill for 15 minutes. Turning the corn with thongs every five minutes.    
  2. While corn is grilling, add any remaining mayo/garlic to the salad dressing shaker also add in crema, and lime juice. Set to the side while you chop cilantro, green onion, and jalapeno. Add chopped greens to salad dressing shaker. Shake well and set to the side till ready to use. 
  3. Remove corn from the grill, and with the corn peeler shave the kernels off the corn and allow to fall into the bowl.  
  4. Add cotija cheese, chili flakes, and black beans to the corn. Mix well to combine. Then pour salad dressing over the mixture. 
  5. Serve salad warm with a nice helping of tortilla chips.

Are you ready to rev up that Bar-B-Q pit and shish kabob for grilling? It’s officially grilling season with Memorial Day around the corner and Father’s day a stones throw away. It’s time to start planning your menus and gathering people around the pit. What do you typically like to grill? My family grills carne asada and anaheim chiles stuffed with queso quesadilla. We love to grill veggies and green onions, if my uncle is around he always wants his share of jalapenos thrown a top the fire-y hot grate. I like to make packets of aluminum foil and fill them with chopped zucchini a little bit of olive oil and cotija cheese…… I call them Bar-B-Q calabasitas. Here’s the serious truth, we can’t have an outdoor cooking session without making Grilled Corn And Queso Fresco Salad. I usually prep the corn in the house then throw it on the barbie, while the maize is grilling I chop up the other ingredients and make a dressing of crema, lime juice, and a little cotija cheese. OMG…. My mouth just watered recounting the details of this recipe back to you. Every time I make the salad (which is when we have a Bar-B-Q) my fiance tells me I need to be making this salad at least once a week. My Mom loves it cuz it’s vegetarian, and I heart it because it’s down right GOOD! I usually make it as a side dish but it could be enjoyed as a meal all on it’s own. Don’t get me wrong, it does taste lickable paired with a slice of chicken or sizzling piece of carne asada as well. But what really makes this salad pop is the queso fresco teamed up with the sweet corn and the tangy crema lime cojita cheese dressing. Delish! Make it for your next Bar-B-Q! Plus it’s so easy to get all the hispanic dairy needed for this recipe. With California being the leading producer of hispanic dairy products all you have to do is look for the Real CA Milk / cheese seals on the labels of your hispanic dairy. Ingredients for Grilled Corn and Queso Fresco Salad:

  • 1 – tablespoon of butter (room temperature)
  • 4 – corn on the cob
  • 5 or 6 – stalks of green onion
  • 1 – tablespoon of olive oil
  • salt to taste
  • 2 – ripe avocados (sliced and cubed)
  • 1 – cup chopped tomatoes
  • 1 – cup sliced red onion
  • 1/2 – cup cilantro leaves
  • 5 – radishes (thinly sliced)
  • 1 – package queso fresco Ranchero (crumbled in large pieces)
  • (optional) 2 – grilled green chiles- diced (serrano, or jalapeno, or anaheim)

Ingredients for Crema Lime Cotija Cheese dressing:

  • 3 – tablespoons crema
  • 1 1/2 – large limes (juiced, about 4 tablespoons)
  • 1 – tablespoon cotija cheese
Directions:
  1. Heat up the bar-b-q or grill.
  2. Smear butter on the corn on the cob. Set to the side.
  3. Trim edges of green onions off and smear with olive oil. Set to the side.
  4. Sprinkle both corn and green onions with salt to your liking.
  5. Place both corn and green onion on bar-b-q and grill for green onion for about 6 minutes. 
  6. Grill the corn for 15 to 20 minutes or until kernels are slightly charred. 
  7. Remove from grill and shave the kernels from the cob with a sharp knife. 
  8. Add shaved corn to a bowl along with avocado, tomato, red onion, cilantro, radishes, queso fresco, (optional) green chiles, and grilled onion to serve on the side. (pictured above)
  9. Give the ingredients a good mix, and set to the side.
  10. In a small bowl mix ingredients for dressing with a whisk, then pour over salad and give a final mix.
  11. Serve with grilled green onion on the side.

Fish Ceviche (Ceviche de Pescado) Goes So Well With Lay’s #StaxQueRico

If you know me well, then you know for a fact that my house has a personal cabinet dedicated to chips (if we don’t have a minimum of 5 bags in the house then their will be a  problem), we eat chips with everything and since I could speak my number one chip has always been Lays. I also enjoy bringing friends together for a great time. Last Tuesday my friends and I got a jump start on Cinco de Mayo with Lay’s #StaxQueRico flavors. I asked all my guests to come over, sort of potluck style, and to bring a dip that would pair well with the new Stax crisps or a dish inspired by the crisps. It was a complete success…. All sorts of yummy dishes made their way into my kitchen and we had an amazing time. Here is what we had: pork adobada, strawberry mango salsa, spicy avocado sauce, hot dogs topped with stax Adobadas crisps, chicharrone chicken, chile verde, sangria, bloody marys, and my bacon bean dip and fish ceviche.

Ingredients for Fish Ceviche:

  • 3 – cups of freshly squeezed lemon juice
  • 2 – cups of finely chopped white fish (either halibut or tilapia, or a mixture of both)
  • 3/4 – cup finely chopped red onion
  • 1 – cup finely chopped tomato
  • 3/4 – cup finely chopped cucumber
  • 1/2 – cup finely chopped cilantro
  • 1/2 – tablespoon garlic powder
  • 1 – tablespoon salt
  • 2 – ripe avocados (diced)
  • Tapatio (optional)

Directions:

  1. Add lemon juice to a large bowl, then add in the small fish chunks. Place in the fridge, and allow to refrigerate for 5 hours or overnight.
  2. Next chop red onion, tomato, cilantro and cucumber. Add all veggies to fish/lemon mixture.
  3. Give it a good mix then add garlic powder and salt. Mix to combine.
  4. Cover bowl with plastic wrap and place back in fridge, and allow to refrigerate for 1 additional hour.
  5. Right before serving mix in avocado chunks.
  6. Serve right away.
Baked Stuffed Bell Peppers

I made this recipe for the first time about 6 years ago. I found myself in a strange house a top the hill in Mount Washington. My Aunt Brilla was here in Los Angeles visiting, and had rented this beautiful home, it being my first time in this kitchen made cooking a little difficult since I had no idea where anything was. I searched the drawers and cabinets and could only find a baking dish, a sharp knife and a frying pan.  We had a house full of visitors who had come by to see my Aunt since she’s not in town that often and many of them were vegetarians. I thought fast on my feet and started frying up some cubed potatoes to make a vegetable stuffing for the pile of bell peppers a friend had brought over. Simple. Delicious. Easy to make. I stuffed the peppers popped them in the oven for 45 to an hour and by the time they were done so was the rest of the meal.

Ingredients for Baked Stuffed Bell Peppers:

  • 3 – Idaho Potatoes (peeled, diced into cubes and fried til crisp and cooked through)
  • 1/2 – cup cheddar cheese (cubed)
  • 1/2 – cup pepper jack cheese (cubed)
  • 1/2 – cup parmesan cheese (grated)
  • 3/4 – cup tomato (chopped into small cubes)
  • 1 – onion (sliced)
  • 8 – mushrooms (chopped into quarters)
  • 2 – tablespoons butter
  • 10 – fresh basil leaves (torn into pieces)
  • 4 – slices of rosemary bread (toasted and cut into cubes)
  • 1 – tablespoon garlic (minced)
  • 1/2 – vegetable broth
  • 10 – bell peppers

Directions:

  1. Preheat oven to   degrees Fahrenheit
  2. Fry potatoes and once cooked remove from flame and set to the side.
  3. Cut cheeses, and tomatoes and set to the side.
  4. In a frying pan add butter and saute onion and mushrooms together for about 10 minutes or until onions are limp. Remove from heat and set to the side.
  5. Toast Rosemary bread and cut into cubes. Set to the side.
  6. In a large bowl add potatoes, cheeses, tomatoes, onions and mushrooms, basil leaf pieces, toast, and garlic. Mix well. Then pour broth over top and mix again. Set stuffing mixture to the side.
  7. Wash and dry bell peppers. Then cut off tops of bell peppers (reserve tops to the side) and remove seeds and veins from the inside. Set to the side.
  8. Place empty bell peppers in a baking dish, then once they are snug take a huge spoonful of stuffing mixture and fill to the top. Then top each pepper with the top. 
  9. Bake for 45 to 60 minutes.
  10. Enjoy!
