Today is officially the first day of Fall, and September is national breakfast month. I’ve been waiting patiently for the cooler weather to grace us and make it’s presence known. There is something about that crisp cool air that guides me to my kitchen and begs me to turn on the oven. Once the oven is roaring there is almost a 99% chance I will be baking one of my homemade breads.

Last week I got an email from ALDI supermarket that asked if I would be interested in a challenge. As I read further it stated that I would have to create a menu to entertain a large group of family and/or friends for a soccer brunch. Immediately I thought “I welcome this challenge, and why not do it Sunday the 17th of June in time for us to cheer on our beloved MEXICO!!!!” They were basically asking me to have a soccer viewing party at my house on a $40 dollar budget. I love hosting parties and if I could make it happen with 40 bucks, even more to celebrate. Since we were obviously rooting for Mexico a Mexican brunch would be ideal. I decided to make a tray of breakfast enchiladas with huevos on top, an arroz con leche bar, and serve orange juice too. (more…)

Peanut Butter Raspberry Banana Brioche French Toast

It’s been a little while since the last time I was in Paris, France. I am remembering the fantastic brioche french toast I forked into my mouth in the city of lights. I think of how perfect the hotel paired my fluffy french toast with a tart raspberry jam and powdered sugar on top. I like my world whimsical, fun, and full of love. I am known to live in a close knit circle of friends who all keep it positive.
