Black Bean Tostadas for INCREDIBLES 2

The official countdown is on for Disney Pixar’s INCREDIBLES 2 to hit theaters June 15^th! My son is jumping out of his skin in anticipation. He loves INCREDIBLES and so does the rest of our family.

We have a cookie cutter set to make the INCREDIBLES symbol out of cookies, but the truth is my son is not a big fan of cookies. He dug them out the other day and says “Mom, I’m so excited about INCREDIBLES 2 starting soon. I want to use these.” He opened his hand and showed me the cutters. I thought “what could we make together that would be a quick snack using his INCREDIBLES cutters?”

I quickly remembered that we had store bought tostada shells, a pot of refried black beans, and several types of cheese in the fridge. I knew the cookie cutters would work exceptionally well on cutting the cheese and we could make black bean tostadas with the INCREDIBLES logo on top. What a fun way to anticipate the release of INCREDIBLES 2!

We headed to the kitchen, I turned on the radio, and started to build our tostadas. The craziest coincidence happened. NPR was interviewing Brad Bird (the director of the film) at that very moment. He was talking fondly about creating the first INCREDIBLES, and how it was the best time he’s ever had working on a film. I couldn’t have asked for a more perfect narrative as we cut out our INCREDIBLES logo cheese shapes. We listened as he went down the timeline of when the first one was released (2004) and how not too long ago he knew it was time to make INCREDIBLES 2. Thank the stars above he decided to do just that, now we all get to see it.
