Berry Fig Steel Cut Oatmeal
Last night I dreamt I was a forest fairy. In my dream I was eating oatmeal, but calling it by it’s Spanish name ‘Avena’. I sometimes dream in Spanglish, and slide between my two languages at fluent speed. For some reason there were many windmills all around turning in a hypnotic swirl, perhaps churring butter or grinding wheat. This forest was wild in shades of green, purple, blue and overgrown with twigs and berries. I found comfort amongst my fairy friends as we picked our fruit for breakfast and made big bowls of AVENA with spoons in our hair, deep in a beautiful forest.
I woke up and didn’t want the feeling or dream to end. The fantasy was too magical to allow the light of day put to put a stop to it. I craved those berries and figs that laced my avena from my dream state life. Ingredients for Berry Fig Steel Cut Oatmeal:
- 4 – cups water
- cinnamon stick
- 1 – cup steel cut oatmeal
- 1 – teaspoon vanilla
- 2 – tablespoons brown sugar
- figs (sliced)
- blueberries
- blackberries
- pomegranate seeds
- almond windmill cookies (optional)
- In a pot over a medium flame add water, and a cinnamon stick. Bring water to a rolling boil.
- Add in oatmeal and give it a good stir. Bring mixture to a boil, which will allow mixture to thicken.
- Once oatmeal is boiling lower the flame to a simmer. Simmer for 30 minutes.
- Remove pot from flame, and set to the side.
- Serve hot in a bowl and garnish with brown sugar, figs, blueberries, blackberries, pomegranate seeds, and almond windmill cookies for a little extra crunch.
