It’s finally time to go back to school. After months and month of being together as a family our boy is headed back to in-person class. I find myself excited about our new/old routine and have promised my family to start the day with a delicious breakfast every morning. #MorningsMeanMore these days as a time to be present and connect before the distraction of the day. On special days Blueberry Oat Cereal Milk Pancakes (my son’s favorite) will be my go to breakfast and on the days when time is not on our side I’ll serve the epic combo of #RealCaliforniaMilk and Cereal.

Ingredients Blueberry Oat Cereal Milk Pancakes:
- 1 cup oat cereal (1/2 cup whole + 1/2 cup crushed)
- 1 1/4 Real California Milk (lukewarm)
- 1 egg
- 1/4 cup butter (1/2 stick) (melted)
- 1 teaspoon vanilla
- 1 cup flour
- 2 tablespoons brown sugar
- a pinch of ground cinnamon
- 1 tablespoon baking powder
- 1/4 teaspoon salt
Pour 1/2 cup of oat cereal into 1 1/4 cup milk and let it soak for 10 minutes. Strain cereal out of milk and reserve cereal milk for recipe.
Crush cereal in a small ziplock bag or in a food processor until a fine crumb.
Whisk cereal milk, egg, melted butter and vanilla together until combined.
Whisk crushed cereal, flour, sugar, cinnamon, baking powder and salt together in a bowl until completely combined.
Gently mix the dry ingredients into the wet mixture just until it comes together do not over mix.
Heat a griddle or skillet over a medium high flame and allow to get hot.
Add a little bit of butter to pan to coat or spray with a non stick cooking spray.
Pour 1/4 cup batter into the center of pan and cook until little bubbles start to form in the center of the pancake then add a few blueberries and flip it to the other side. Cook until browned.
Stack and top with butter, blueberries and syrup!
