The 1st Saturday of September is National Tailgating Day. This year it falls on September 5th smack dab in the middle of Labor Day weekend during a pandemic that is keeping us safer at home. Yes, I wish I was at the stadium participating in this fun festive day but I won’t let staying at home rain on my parade…. I’ll just homegate instead. Lots of games are being televised today and I’m here for it especially with my delicious GAME DAY SPREAD. I made it easy for myself and ran over to Northgate Market to pick up all my favorite ready made snacks. Grabbed a pound of crispy potato wedges, tortilla chips, salsa ranchera, guacamole, rajas con crema, cacahuates japoneses, I love michelada, a bag of chicharrones de harina, a few onions to make homemade onion rings, and I was good to go!
We still have a few months of this staying at home business watching televised games so make the most of it… give my easy game day spread a try while you cheer on your favorite team.
What you’ll need for a GAME DAY SPREAD:
- Potato Wedges
- Tortilla Chips
- Rajas con Crema
- Chicharrones De Harina
- Cacahuates Japoneses
- I Love Michelada
- Your favorite beer
Ingredients for Homemade Onion Rings:
- 1 ½ cups flour
- 2 teaspoons baking powder
- 1 ½ teaspoons black pepper
- 2 teaspoons corn starch
- 1 ½ teaspoons salt
- 1 white onion cut into ½ inch slices (then separated into individual rings)
- 12 oz. Mineral water
- 4 cups vegetable oil
- Whisk flour, baking powder, black pepper, corn starch, and salt in a bowl. Mix to combine completely.
- Dip the onions into the flour mixture to evenly coat. Remove them from the flour and let them rest for a few minutes on a cutting board.
- Pour mineral water into the flour mixture and whisk until smooth and no longer lumpy. Let batter rest for 5 minutes.
- Heat vegetable oil in a small pot over a medium flame. Allow the oil to get hot – 350 degrees Fahrenheit.
- While the oil is heating dip your floured onion into the batter.
- Shake off excess batter and drop into the hot oil. Fry each ring on each side until golden and crispy. About 5 minutes each.
- Remove from oil with a slotted spoon and drain for a minute or two on a paper towel lined plate.
