Hummus Avocado Tostada
It’s been a long couple of days: My son joined a baseball team so I’ve been back and forth to the park getting him situated. He also plays drums, and yours truly has to drive him to practice. One of my dearest girlfriends also had a little birthday celebration at my house over the weekend so I was running around cleaning and prepping for that. Also my aunt who lives up in northern California is in town and I’m making all her favorite meals for her and I have a conference starting tomorrow for the remaining portion of the week! Needless to say I’ve been a little crazed.

All this adds up to very little time to cook food and even less time to make something delicious and nutritious. Wait. Let’s rewind on the delicious and nutritious part. When I have no time to cook I whip up this hummus avocado tostada in no time! They are one of the tastiest and quickest meals with little chopping time. I buy baked tostadas ready made at the market. The tub of hummus is a refrigerator staple. Everything else this recipe calls for is usually on my grocery list because it gets eaten really quickly. This is a great alternative to traditional tostadas made with refried beans. I’ve given them an Alta California fresh produce vibe and love it. Try it for yourself and be the judge. You won’t be disappointed.
Ingredients for hummus avocado tostada:
- baked tostadas
- avocado (thinly sliced)
- cucumber (thinly sliced)
- radish (sliced)
- carrot shredds
- purple cabbage (diced)
- black sesame seeds
- queso fresco
- salt and pepper
- Smear 2 tablespoons of hummus on a baked tostada.
- Then layer avocado, cucumber, and radish slices on top of hummus.
- Garnish with carrot, purple cabbage, arugula, and cilantro.
- Squeeze fresh lime juice over the top.
- Sprinkle with black sesame seeds and queso fresco.
- Season with salt and pepper to your liking.
